Crap... I think I gave me & DH food poisoning.
Stupid effing chicken thighs, they looked done but I'm not so sure now. I'm glad neither of us ate much.

Been there, done that. So sorry! Drink loads of water and keep an eye out for a fever higher than 102.
On a good note, if it's been less than 8 hours, chances are it's not salmonella. It takes at least that long to multiply enough to hit your system. It's actually pretty rare to get it from undercooked poultry, it's more likely that your body just doesn't like the undercooked meat.
Suggestion: get a meat thermometer. Even one of the cheap ones, but I like the ones like this one here. Besides making sure they're done, it's amazing what they do for your cooking, since you won't overcook things making sure they're done. All your meat will be super juicy and tender but still safe to eat.
I know you don't want to read all this right now, so I'll end with I'm sorry! Feel better and use it as an excuse to cuddle up in bed!

Really? I have bought probably 10 meat thermometers of varying quality, and I find that they all suck, and if I were to cook the meat until they said it was done, I'd be eating a charcoal brickette.
