So we planted like 6 tomato plants and we have a boatload of tomatoes. I was thinking of making some corn salsa or something like that. Does anybody have a recipe they love and wouldn't mind sharing?

I like to make salsa pretty simple, especially if you're using fresh, homegrown tomatoes! You can double/triple/quadruple the recipe, this is just to give you ratios:
2 large tomatoes, seeded and diced
1 jalapeno, diced
1 tablespoon FRESH SQUEEZED lime juice -- don't use the bottled crap, it makes all the difference!
Small handful of cilantro
1-2 teaspoons cumin
Salt and pepper (prob more salt than you think you need, but taste as you go)
You could add corn, avocado, or mango to make it different!
Mel, I have one at home that I can send you. Although I'm not sure it uses tomatoes.
BTW...I'm super jealous that you have fresh homegrown tomatoes. There is nothing like it.
