If I refrigerate banana bread dough...

do i need to bring it back up to room temp before I bake it?

    If you put it in the fridge at all..  It seems as soon as the mix cools it turns brown.   The longer it chills the darker it gets.  I thought I was being sly by making muffins the night before and then baking them on the day of...  They tasted fine, but didn't look right.

  • I actually did this last week, I put leftover batter in a Tupperware container and covered the top with saran wrap. It did not turn colors in the fridge or once baked so i think limiting the air that touched it helped.

    I did not let the bater come to room temp before baking and it came out fine, just needed to add a few mins of baking time.

  • I don't think 90 min to too long to leave it out.  If you're worried, you would always mix everything and put in the eggs last minute.

    I think it's still going to turn dark at room temperature.  It's the bananas that do that.  I'd do like the PP said, put it in a tupperware container and put saran wrap down on the top of the batter to limit the air contact.

  • It changes color because the bananas are exposed to air. If you can put saran wrap over your dough to keep the air out it should be fine. A little Pam on your plastic wrap and you should be able to layer it directly onto your dough with out it sticking when you want to take it off and bake.
