For proteins we like tofu, cheese, beans, chick peas, nuts, etc. No eggs or meat. 

We like most vegetables, etc. but despise tomatoes (raw, regular tomatoes), onions (except green onions), mushrooms (gag) and I'm not a huge fan of peppers, though I'm working on it.

What meals can we prepare ahead so we're not eating pasta every day of our lives?

  • I am not Zwiggy, but one of my favorite veggie meals is to cut up carrots into smaller pieces, toss in some frozen corn, and cook. Also prepare quinoa (cook in veggie broth with some garlic or garlic olive oil). Heat up some black beans (no salt added). Stir all of this together with some spinach (added at the last minute).

    This can make a good hot meal on its own, or it can be used as a dip, or you can put it in tortillas and have it as a wrap. 

    Also, my friend (a food blogger who is studying to be a nutritionist--currently in grad school) recently went veggie with her husband and has been blogging about their meals: http://www.theleangreenbean.com/. It might serve as some inspiration. xx 


  • You can also obviously do black bean tacos to prepare ahead--one of my faves. I usually also add in some corn, red chiles, and possibly red pepper (but you could skip this since you're not keen on the flavor) and then season with taco mix (paprika, chile powder, etc). Anyway, you can mix up this stuff in advance and then store it until you're ready to eat it. I can vouch for it being good both hot and cold. :) Then once you made your taco, load it up with a lot of spinach and possibly some cheese too. Nom nom.

    You know what the strangest part about it was? I actually enjoyed making food in the kitchen today. Seriously. (I normally avoid that room of the house)
