For proteins we like tofu, cheese, beans, chick peas, nuts, etc. No eggs or meat.
We like most vegetables, etc. but despise tomatoes (raw, regular tomatoes), onions (except green onions), mushrooms (gag) and I'm not a huge fan of peppers, though I'm working on it.
What meals can we prepare ahead so we're not eating pasta every day of our lives?

Re: Zwiggy
I am not Zwiggy, but one of my favorite veggie meals is to cut up carrots into smaller pieces, toss in some frozen corn, and cook. Also prepare quinoa (cook in veggie broth with some garlic or garlic olive oil). Heat up some black beans (no salt added). Stir all of this together with some spinach (added at the last minute).
This can make a good hot meal on its own, or it can be used as a dip, or you can put it in tortillas and have it as a wrap.
Also, my friend (a food blogger who is studying to be a nutritionist--currently in grad school) recently went veggie with her husband and has been blogging about their meals: http://www.theleangreenbean.com/. It might serve as some inspiration. xx
These sound fantastic, thanks guys!
You know what the strangest part about it was? I actually enjoyed making food in the kitchen today. Seriously. (I normally avoid that room of the house)
