Allan leaves this week for basic and I'm cooking for just myself for a looong while. What do you ladies eat while your SO is gone? I'm trying to eat really healthy, but I don't mind an indulgence once in awhile. TIA!

I wasn't with C when he was at basic, but when he deployed I basically made whatever I wanted and either just downsized it or froze half. Every Sunday I would make a big pot of soup and freeze individual servings and eat leftovers for a few days. But, I don't mind leftovers.
It also came in handy because I would do that for a couple of weeks and have a full freezer to eat from for dinner (I brought them for lunch.) Pop a frozen tupperware of soup into my lunch bag and it kept my fruit cold and it was mostly defrosted by the time lunch came around.
I also did different meals from one night of cooking. So I would make all four chicken breasts, but one I would eat as-is with veggies or salad, two I would shred and make enchiladas out of it (add a little spanish rice and black beans), and the fourth I would put pasta sauce (I also make htis homeade and freeze it) on top, mozzarella cheese, and serve over pasta. So one package of chicken breasts for what, $3.50 made three meals. And typically there was enough enchiladas left over for a lunch meal, too.
I truly think it all comes down to advanced planning if you want to eat real, solid meals while he's gone. Of course, there are also nights that you just eat cereal and ice cream and that's more than acceptable, as well. Let me know if you want any recipes.
Uhhhhh I eat a lot of cereal, sandwiches and Luna bars since I despise freezer meals and leftovers.
I can't say I've really cooked much of anything since H left over 3 months ago lol.

My husband is kind of picky, so I eat all the stuff that he hates. I LOVE sandwiches and usually do veggie sandwiches that are really good. I also do individual pizzas on pitas, mini turkey meatloaves, things that I like to eat while he is there...just in smaller portions.
In my opinion it is more fun to try new recipes while he is gone because ingredients for one aren't as expensive as buying ingredients for the both of us. For example, I can splurge and buy gruyere because I'm eating mostly eating veggie dishes.
If you like veggies, Little Giant (I think it is that company or maybe it is Steam Fresh) makes steam pouches for one that are perfect.
I do a lot of this but wanted to add a few things:
Buy a bag of frozen shrimp. You can take out a handful and thaw it in minutes to throw it in pasta, make shrimp enchiladas, or eat it however you want.
I cook up a bunch of ground beef and throw it in baggies to freeze. It can then be used for spaghetti sauce, taco meat, sloppy joes, nachos, etc.
If you cook pasta sauce and you make a big batch, freeze it in an ice cube tray. Once it's solid, pop them out and throw them in a bag. It makes for super easy portion control.
A crock pot pulled pork can be used in tons of different ways and can be frozen in individual portions.
Make cookie dough and freeze the dough into balls, then put in a ziplock. It's great for when you need a quick pick me up. Throw the frozen ball on a sheet and bake for 15-20 minutes and you have a fresh cookie. Or eat the dough frozen like I do sometimes
Muffins, waffles, and pancakes can be frozen and popped in the microwave for a quick snack or breakfast.
Breakfast for dinner is also quick and easy. Hashbrowns, eggs, bacon and cheese all mixed together is a yummy and filling meal!
If you set aside one day to prep everything, it can make meal time a breeze! Good luck!
I eat a lot of chicken. I can roast or grill breasts one at a time and eat it with vegetables or make some kind of sauce/pasta/rice/quinoa.
And if I'm not feeling that, I rely on the old standbys...cereal, sandwiches, eggs, etc.
It pretty much comes down to anything that I can make individual servings of because I hate leftovers.
