Our tech team has launched updates to The Nest today. I need to help making a menu this week. I only have today figured out because Rusty is working late and I just have to feed me and the Parkster.

I might not be a huge help because DH is away tomorrow night, and we are headed to CT this weekend, so we don't want a lot of leftovers...but what I do have planned:
M- chicken soft tacos, maybe w/salad or zucchini (odd combo<, I know, but I don't want it to go bad!)
T- I'm on my own, so something easy, possibly leftovers from spaghetti yesterday
W- most likely chili, maybe a new green chicken chili recipe
Th- leftovers
Fri- ?
Not sure on the order of things yet, but...
*Parmesan Porkchops
*Chicken Bruschetta pasta
*Japanese stirfry
*Oven fried chicken legs
The other nights, we're out or with family.
This is a weird food week for us because when I went shopping on Friday, I didn't want to buy any new meat, or anything frozen that could be ruined if we lost power. So, I'm trying to make do with what we have in the freezer.
Mon - Baked Honey Dijon Chicken Tenders, roasted potatoes, and roasted veggies
Tue - dinner at my parents'
Wed - leftover baked ziti and roasted veggies
Thurs - frozen pizza? leftovers?
Fri - TBD
(assuming the power stays off...)
Monday - Chili Garlic Burgers, Salad
Tuesday - Grilled Eggplant Parm, flatbread
Wednesday - Steaks, Smashed potatoes, green beans
Thursday - Garlic Balsamic Pork Tenderloin on the grill, salad, flatbread
Friday - Grilled Pizza

M: slimmed down baked chicken with creamy cheesy rice, steamed broccoli (this recipe was DELICIOUS- highly recommend it)

Marissa, the baked chicken looks and sound delicious! We might have to make that in the near future! Would it be ok if I used boneless, skinless chicken?

I love this dough recipe because it's super easy. You could get a ball of pre-made dough too, though. I wouldn't suggest using the stuff from a can.
