What's your favorite casserole?
Something that reheats well. DH is not a big fan of casseroles so I don't usually make them but *I* love them. I was thinking I could make something that I could portion out for my lunches...

Being a vegetarian, we make one with broccoli, carrots, cauliflower and cheese and we put bread crumbs on top, but I think it originally had Ritz crackers? I'm sure you could add chicken to it?
What about one with stewed tomatoes, macaroni & beef - I remember my mom making something like this when I was growing up...

Yes! KraftFoods.com is awesome for casserole recipes. When they used to send out the magazines every quarter, they'd always have the same casserole with pasta, meat, broccoli and velveeta, but with some other random ingredient thrown in and then they'd call it something else. Not that I mind, they are all awesome.
In the winter I like chicken divan.
Normal 0
Boneless chicken or tenders ? cut into pieces.
1 C. grated (or shredded) cheese (I use Monterey Jack)
? C. butter 5 T. flour
1 ? C. chicken broth 1 C. whipping cream
Dry breadcrumbs (I use the 4C Italian Flavored)
Frozen broccoli (I like the petite florettes)
Microwave chicken pieces for several minutes till no longer pink. Cool and drain.
Put broccoli in baking dish. Add cooked chicken pieces.
Melt butter in pan. Wisk in flour. Add broth & cheese stirring constantly. Add
cream. Cook on med. till thick. Pour over chicken & broccoli. Cover with breadcrumbs.
Bake at 305* for 25 ? 30 min. Let sit a few mins. for sauce to thicken.
I adore the Pioneer's Chicken Spaghetti casserole, but I NEVER make it because of the ingredients it uses.

Just this morning, I was thinking about trying to make it by making a white sauce in place of the cream of mushroom soup...
