Is anyone around today? I have to go grocery shopping on my way home and I can't think of anything to make for dinner, I am in a dinner rut.  Anyone have any quick easy meal that I could make tonight. I am up for almost anything except seafood and pork.

    We're having chicken tacos with some pulled chicken I made a while ago and froze.  I haven't done this before so I'm hoping it turns out.  I'm also hoping that I have taco seasoning in the pantry...

  • Maybe I will make chicken taco's tonight... I have never had them. I wonder would I just bake or grill the chicken and then shred it? The only time I shred chicken is after it's been in the crockpot all day.

  • When I make chicken tacos, I just cut a raw breast into strips and then cook it on the stove with taco seasoning.  I am weird and prefer strips or chunks of chicken (think fajitas) instead of shredded chicken.  I have heard of boiling the breasts to shred them, too.

    Tonight we're boring & I'm just making a large salad w/ chicken on top.

    I boiled the chicken breats when I did it.  I had never done it before and was so nervous!  LOL 

    I just put the chicken in a pot, covered it with water, and placed it on the stove.  They were really thick chicken breasts, so it probably took 15-20 minutes.  I just kept taking one out and cutting it to see if it was done yet.  I think I added more water at one point too.

    When they were done, I took them out of the pot, dried them off, and left them on a plate to cool.  Then I just used a fork and/or my fingers to shred it.  By far one of the weirdest things I've ever done, but it works.  I then froze them in 1-2 cup portions. 

    So far I've only used it to make quesadillas.  I didn't use any special seasoning on them, but I do mix salsa with the chicken when I make quesadillas.  So much better than using canned chicken like I had been!  I also plan to use it in pasta and tacos like tonight.  I'm just going to make the tacos like I would if I was making them with beef.  I'll mix the chicken and the seasoning (and water I believe?) in a pan and let it heat up.
