OK- I made this over a month ago and here are the long-awaited pictures. It was awesome! Thanks for the idea, Lauren! I layered the cream cheese/sugar mixture with homemade peanut butter ice cream instead of mixing peanut butter & cool whip together. Turned out great! It was almost TOO rich.

I am making dinner tonight for tomorrow- my in laws are flying in to spend a day or two with us. I am making this Three Cheese Lasagna (but with all ground beef and no italian sausage, since I can't eat sausage). I use mostly Trader Joe's products for the sauce- and it turns out great. I also half the amount of carrots- b/c I think too many makes the sauce too sweet.

I am making Burrito Lasagna tonight, new recipe so we'll see! Here's the recipe.
2 lbs. ground beef
2 cans enchilada sauce
1 envelope taco seasoning
1 Tbsp. ground cumin
1 pkg ready-to-serve Spanish rice
12 flour tortillas (8 in.) warmed
1 can (15 oz) refried beans
4 cups Mexican cheese blend
Optional toppings: salsa, sliced avocado, shredded lettuce, taco sauce, sour cream, tomatoes, etc.
1) In a large skillet, cook beef over medium heat until no longer pink, drain. Stir in enchilada sauce, taco seasoning, cumin, heat through.
2) Heat rice according to pkg. directions. Spread each tortilla with about 2 tablespoonfuls of beans. Spread 1 cup meat mixture into a greased 13 x 9 in. pan. Layer with 4 tortillas and a third of rice, a third of the remaining meat mixture, and a third of cheese. Repeat layers. Top with remaining tortillas, rice, and meat mixture.
3) Cover and bake at 350 for 20 minutes. Sprinkle with remaining cheese. Uncover, bake 10-15 minutes or until cheese is melted. Let stand for 10 minutes before serving. Serve with toppings of your choice.
I make something very similar to burrito lasagna at least twice a month. I love easy recipes!
Some of you may have seen on FB, but I made these awesome chocolate chip cookies that I found on Pinterest. I substituted cake flour for the pastry flour, but otherwise I made the same exact recipe. They were super yummy and decadent!
