Since you asked for the recipe for the butternut squash mac and cheese I thought I would give you a review.
It was great! I did not tell DH that it had squash in it. After a few bites he was raving about how good it was so I broke the news to him. It's a little sweeter that regular mac and cheese and the texture is a little different (sauce not as creamy) but the taste is great.
And the nutritional info is awesome. 390 calories for 1/8th of the recipe. That's a HUGE (meal sized) serving and there's no way we ate that much as a side.

YUM YUM YUM!!!! I really want to try this for Char b/c she's a mac and cheese fiend (what 3.5 year old isn't?), so this would be a good way to get some veggies in there for her.
