Foodies and veggies

I am making veggie burgers for dinner tomorrow and I have noticed comments on online recipes saying to add corn and possibly substitute oatmeal for the bread crumbs. Anyone tried this before? With the corn, do you think I should pop it into the food processor or leave chunks of corn in the patties?

  • Hi! :-) Which recipe are you using?

    While I haven't tried it, I have definitely heard of using oatmeal in veggie burgers, I think soaked in milk (?), in place of bread crumbs, so that might be good and a little healthier :-)

    And I love corn, so I wouldn't hesitate to leave it in there whole! But if you prefer not to have chunks of corn, then you could pulse it so it's smaller.

  • I kind of look at several recipes and use bits and pieces of each. I just can't seem to find a recipe that has corn or oatmeal in the original recipe. It always ends up in the commentary and not in an actual recipe. I think I will try the corn for sure! I am debating on the oatmeal.
  • I was browsing my recipes, not sure if you saw this one. It has the oatmeal, and you could easily swap the chickpeas for corn. (Then it'd be a corn and black bean burger, yum!)

  • ooooh that looks good! yum... quick question, are rolled oats the same thing as oatmeal (like the kind you  eat for breakfast??).  I have a box of oatmeal at home already if it is the same thing
  • Yep! I am pretty sure they're the same. I have the Quaker oatmeal - Quick Cooking White Oats.I think as long as it's instant/quick cooking, you should be fine!

  • Cool! It looks like I might have BIL and his GF joining us as well. Eeek! I have never made such a large batch of veggie burgers before (6ppl). Should be interesting :)
  • ooh, thanks for the veggie burger recipe! I have been meaning to try to make my own for a while but just haven't. Can't wait to try it!

  • DH makes ours, and uses instant oats in both the veggie and meat versions!
