I know we're all on different delivery schedules - but by chance anyone get todays?
I have spent the last 1/2 hour at work looking for recipes.
I may attempt eggplant parmesean for the first time.
I'm at a loss of what I want to do with the sweet peppers. I cook with peppers all the time so I'm thinking its time to find something new.

I get my box next week, but eggplant parm is super tasty and easy. Just make sure you press the eggplant for at least an hour so that it doesn't turn out soggy.
And what about kebabs with the sweet peppers? Next week is going to be toasty, so those would be perfect on the grill.

i love eggplant parm, and uw has a good suggestion for grilling peppers. i love grilled peppers.
