WWYB? (What would you bake?)
A friend and co-worker who has been out about a month due to a heart attack comes back on Monday. I'll take any excuse to bake for the office and he loves my baking. I was planning to do an easy pluot/fruit cake recipe I have. But... he had a heart attack, he's talking about changing his diet. Maybe cake, even if it's fruity, is not the best option? I don't know exactly what he's changing or what he can't have. What can I bring in that's yummy and healthy?

I have a recipe for a light apple cake that is pretty healthy and doesn't use butter, egg yolks, or unhealthy fats:
Ingredients:
BATTER:
*3 egg whites
*1 ? cups sugar
*1 cup unsweetened applesauce
*1 teaspoon vanilla
*2 cups all-purpose flour
*2 teaspoons ground cinnamon
*1 teaspoon baking soda
*1/4 teaspoon salt
*2 1/2 cups tart apple - cored, peeled, sliced thinly
GLAZE:
*1 ? cups vanilla yogurt
*3 tablespoons brown sugar (or more if desired)
*1 teaspoon vanilla
Directions:
Preheat oven to 350. Beat egg whites until slightly foamy; add sugar, applesauce and vanilla. Combine flour, cinnamon, baking soda, and salt in separate bowl; add to applesauce mixture, beat just until combined.
Spray 9x9 pan with nonstick cooking spray. Spread apple slices in bottom of pan. Spread batter over apples. Bake 35-40 minutes or until toothpick inserted in center comes out clean. Cool on wire rack.
To prepare glaze, combine yogurt, brown sugar, and vanilla. Stir together until smooth. Spread over cooled cake.
