WWYB? (What would you bake?)

A friend and co-worker who has been out about a month due to a heart attack comes back on Monday. I'll take any excuse to bake for the office and he loves my baking. I was planning to do an easy pluot/fruit cake recipe I have. But... he had a heart attack, he's talking about changing his diet. Maybe cake, even if it's fruity, is not the best option? I don't know exactly what he's changing or what he can't have. What can I bring in that's yummy and healthy?

  • If I'm doing something "healthy-ish", I usually make a fruit cobbler/crisp. I very lightly sweeten the fruit with some honey or sugar. Then, I make a crumbly topping of oatmeal, whole wheat flour, pecans, agave or honey, olive oil, cinnamon. I just kinda make it up as I go along. It's usually not very sweet. Mostly oats.
  • My grandpa had bi-pass surgery when I was in high school and since then he's eaten quite differently. He doesn't eat egg yoke anymore or butter. Probably anything heavy with butter and eggs would be out. I would do something low fat. Unless he also has diabetes, I wouldn't worry about sugar. GL!
  • I agree with Angela, that a fruit based crisp or cobbler would be the way to go.  Maybe something apple to welcome in Fall!  :)

  • I have a recipe for a light apple cake that is pretty healthy and doesn't use butter, egg yolks, or unhealthy fats:

    Ingredients:

                BATTER:

                *3 egg whites

                *1 ? cups sugar

                *1 cup unsweetened applesauce

                *1 teaspoon vanilla

                *2 cups all-purpose flour

                *2 teaspoons ground cinnamon

                *1 teaspoon baking soda

                *1/4 teaspoon salt

                *2 1/2 cups tart apple - cored, peeled, sliced thinly

                GLAZE:

                *1 ? cups vanilla yogurt

                *3 tablespoons brown sugar (or more if desired)

                *1 teaspoon vanilla

     

    Directions:

     

    Preheat oven to 350.  Beat egg whites until slightly foamy; add sugar, applesauce and vanilla.  Combine flour, cinnamon, baking soda, and salt in separate bowl; add to applesauce mixture, beat just until combined.

     

    Spray 9x9 pan with nonstick cooking spray.  Spread apple slices in bottom of pan.  Spread batter over apples.  Bake 35-40 minutes or until toothpick inserted in center comes out clean.  Cool on wire rack.

     

    To prepare glaze, combine yogurt, brown sugar, and vanilla.  Stir together until smooth.  Spread over cooled cake.

     

    Calorie Count: 170 per serving

  • Mrsjacinthe's apple cake sounds perfect to me. I was going to try to find my mom's recipe for apple cake! It's very similar.
  • I'd either find some kind of "healthy" recipe (I have a WW recipe for decent banana bread at home, if you're interested), or I'd make something else that's not a baked good. A big salad with some seasonal veggies or fruit? Something that looks great at the farmers' market... I know it's not as fun as baking but he probably needs to really watch his diet.
