how do you freeze pasta sauce

I'm dreaming ahead to when the kitchen is done and I want to make a double batch of bolognase sauce, it should be enough for at least 4 meals.  I rarely cook in big quanties, so I'm wondering if it would be better to store the extra servings in freezer bags or is it best to use tupperware type containers?

  • I have done this before and I've portioned the sauce into containers (GladWare or something like that). It's worked well for reheating because I can put the block of sauce right in a pan on the stove to thaw/reheat. I've thought about bags too (for space issues), but not sure about the reheating.

  • A friend of mine routinely makes sauce for freezing and uses storage containers, not bags. It sounds far less messy to me to do it that way.

  • I would recommend using containers and not bags also. As someone who froze a bunch of berry sauces and apple pie fillings in bags a few years ago, the bags usually end up getting tiny holes in them and making a huge mess. When your power goes out and everything melts, it creates a nightmare.
  • We use containers when we freeze so we can just take them for lunch or eat at home later.

  • I am in the minority - we freeze everything flat in bags, much more economical, space wise, and I think it defrosts faster. We have never had any issues with leaks or anything else. We only use containers if we are out of freezer bags.

  • I was actually just reading about this in some food magazine.  The top chefs said to always freeze in bags so they can lay flat.
