I have ground turkey out and a ton of potatoes I need to use. I want to try something different...any ideas???

You could make like a turkey stroganoff casserole layering potatoes in instead of pasta? Or like tater tot casserole but with fresh potatoes?
I would brown the turkey, add in a can or two of mushroom soup (depends on how many lbs of turkey? I'd probably do two?) If you want it to be more of a 'stroganof' taste, I'd add in some beef bullion and sour creme. You could add in some green beans too?
put a layer of potatoes at the bottom of a baking dish, sliced line/round, cover with some of the meat mixture, and repeat alternating potato layer/meat layer. Bake at 350 until potatoes are tender. If you're top layer is potatoes, then I'd let them get brown. You could even put some cheese in there too.

Shepherd's Pie-
1 lb ground turkey
1 can tomato or cream of mushroom soup
1 lb frozen veggies
Potatoes
Cheese
Brown meat & drain. Mix meat, frozen veggies & soup together. Place in long pyrex dish.
Boil potatoes, mash & place on top of meat mixture. Sprinkle with cheese.
Bake at 350 until warmed through.

Here a another Shepard's pie recipe...I like this one a lot cause you make your own cream sauce and you don't have to use canned soup. I've also made it using a can of tomato soup and slices of american cheese. We love shepards pie!

Baked Potato Soup
5 - 7 Large Baking Potatoes
1 stick butter
2/3 cup flour
1 ? quarts whole milk
4-5 green onions ? chopped
1 cup sour cream
1 ? cups bacon ? cooked crispy
And crumbled
Salt and Pepper to taste
5 ? 8 ounces cheddar cheese
Directions: Cook potatoes in oven at 350 degrees until tender. Cut potatoes in half, and scoop out all of the ?meat?. Set aside. Dice half of the potato peels and set with reserved potatoes. Discard remaining peels. In a large saucepan or stockpot, melt butter. Whisk in flour. Cook the butter/flour mixture for a few minutes (while stirring) to help remove the ?raw? flour taste. Add milk in slowly. Whisk constantly until mixture begins to simmer. Turn heat to low, and add the potatoes, peels, and onions. Next, add the sour cream and salt. Continue to stir until sour cream is melted. Next, add bacon and cheese and stir until cheese is melted. This soup is fairly thick, but you can thin it down by adding more milk prior to adding the potatoes and remaining ingredients. This is great served in a bread bowl or alone.
You can brown the turkey and puree it and freeze it for Sean
