Breakfast

I've come to the realization that in the next few months, its going to be very hard  to eat breakfast at home when DD starts eating solids. In the past week, I've already had to miss breakfast twice since my time in the morning doesn't really allow for something going out of whack and me eating is the first thing to go if we have a hiccup. I get up at 5:30 as it is and I'd rather not have to get up earlier.

So give me your best ideas for breakfasts that I can bring to work. Something with minimal prep, and not a lot of tools to prepare. I have a lunch bag, but its usually full with my water bottle and my lunch. At work we have a fridge, microwave and toaster. Also, I really don't like to leave things overnight at work.

Re: Breakfast

  • Instant oatmeal is always my go to easy breakfast. That paired with a banana (or other "easy" fruit) and I'm usually good to go. I also eat a lot of granola bars on the fly but that's not always as satisfying.

  • I have been bringing plain yogurt and granola. I eat it at my desk once I get here. When I have time, I make an egg sandwich and eat it in traffic.

  • I do instant oatmeal-just uses hot water out of the dispenser-, toast with peanut butter, yogurt, and bananas most of the time. I never eat until I get to work because I am not hungry when I first get up. Those things are all very easy to transport and make at the office.

  • I usually eat a waffle in the morning. Just pop that in the toaster and eat while DD is eating. But she also can feed herself. Instant oatmeal would be easy, what about english muffin w/Nutella or Peanut Butter.

    This is me too. I'll often be on the way to work after dropping off DS and realize that I didn't eat breakfast because it slipped my mind or I had to change DS's clothes at the last minute, etc.

    However, if I have time, I eat instant oatmeal. It usually takes 5 mins to cook and eat. For those who eat this at work, do you bring a bowl and spoon that you keep at work and wash?

    I just have a bowl and spoon I keep in my desk drawer and wash them when I am done with them.

    I just use a water cup from our water cooler and a plastic spoon that I wash and reuse. We only have a bathroom sink that clogs easily so I can't really wash dishes here. 

  • I keep a bowl, plate, and silverware at my desk that gets washed after each use.  Much easier than taking things back and forth.  However, we have a full kitchen at work, so I realize my situation might be completely different than yours.

  • I never eat breakfast at home because I am not hungry when I wake up and I refuse to wake up any earlier.  I come in at 7:30 but don't usually eat until about 8:30 or 9.  It almost always consists of a Greek yogurt of some variety with or without granola.  Occasionally it'll be pop tarts or a bagel but that's few and far between.  Then around 11:00, I will snack on something light (fruit, veggies, granola bar, graham crackers, etc) to carry me over until around 1 when I eat lunch.

  • Overnight oats loaded up with toppings, but you do need a container to carry/eat them in.

    Breakfast burritos - make a big batch on the weekend, freeze 'em, grab 'n' go. I wrap mine in foil, so while it's another item in your lunch bag, it's not a bulky container and there's no silverware needed.

    Maybe a bigger lunch bag is needed if it doesn't have space for breakfast? Not trying to be snarky, I swear LOL When I was taking breakfast, lunch and snacks to work it was a lot of food and it took up a lot of room, so I just re-used Target shopping bags. It's not cute, but they always had plenty of space for me.

  • I liked to do prep on the weekends for weekday breakfasts... two favorites are these homemade granola bars and yogurt parfaits (Greek yogurt portioned into tupperware, topped w/berries and I'd throw a handful of granola or Kashi in as I pulled it out of the fridge).  I also like to make batches of oatmeal, portion it into tupperware, and then pull them out in the morning - a minute in the microwave, stirred up w/ a splash of milk, and it was good to go.  The same could be done w/ instant oatmeal, but I prefer cooking my own on the stovetop and reheating.

    I also always kept packets of instant oatmeal at work, which I'd mix up in a mug (I had a couple mugs in my classroom) and just wash out once I was done... that was for really desperate days when I was ridiculously behind schedule. :P

  • My husband usually keeps oatmeal or cereal at work. If you have a fridge there, maybe you can even keep some milk in it. I think my husband just uses water though. Could you do that? You can always grab some fresh fruit in the morning and a yoghurt

  • I hardboil eggs for a few days and grab those each morning.  I also keep oatmeal in my desk.  I just use a cup from the coffee machine and use the hot water.  We have plastic spoons too.  It seems like an 8oz cup would be too small but it is actually perfect.  

    I also will toast bread and have the individual cups of peanut butter in my desk. That and a banana is a great filling breakfast. 

    Overnight oats is also an easy choice (I just am not a fan).  Or a breakfast cookie that you can do ahead of time (google for recipes).  

    You can also cook eggs in the microwave in a cup.  

  • Thanks for all the suggestions. Dani, not snarky at all. I have a pretty big lunch bag and its insulated which helps a lot since items tend to be in if for about 2 hours. My commute alone is 1 hour.

    Do you have a recipe for the burritos? Looks like I might have to invest in some cheap bowls though. Working for the state, they provide nothing when it comes to utensils. We have to pay for coffee and I have a brita water pitcher cause there is no water cooler!

  • Coming in late, but I make steel cut oats on the stove and put them in individual serving bowls with some honey and almonds so I can just grab one and go. Also, a quick fruit smoothie with frozen fruit, yogurt and some milk is fast. Or a bowl of cereal with some milk kept in the fridge at work?

  • I eat turkey sandwiches for breakfast or two slices of whole wheat toast with peanut butter on it. I usually get hungry by about 10:30, so I eat a banana then, and then lunch around noon.
