Because I haven't asked that question in ages. Also, the Wednesday night meal always feels like the hardest one to get excited about - is that just me?

I think we're going to make a deconstructed sushi salad - spinach, brown rice, shrimp, avocado with a wasabi dressing.

  • We're doing these Croque Monsieur Pockets from the latest Food Network Magazine, using pizza dough I already have frozen.

  • I have no idea. Since DH has class tonight, I'll probably just have a sandwich. Unless MIL invites me to stay for dinner when I pick Olivia up tonight. Either way I guess I'm no help.

  • Yum the Croque Monsieur pockets! You could probably also use puff pastry sheets and make those too.

    I made Chicken tortilla soup last night so I think that's what I'm eating. I made it with all fresh peppers, tomatoes, carrots etc so I'm looking forward to it.

  • kaesha, that salad sounds really tasty.  Too bad neither Derek nor Erin will eat shrimp.

    I'm going all out tonight.  We're having burgers.  Ha.  And salad, and some new potatoes on the BBQ, but I still have to figure those out.  I'm not sure if I'll do them in a foil packet or in the BBQ wok.

    I think the deconstructed part makes it sound fancier than it is! LOL!

    I don't think I've ever stir-fried lamb before. I should really try doing that.

  • hopefully something other than cereal. That's pretty much my only goal lately. I still have some leftover taco chicken, so I might put that in a nice salad and let DH fend for himself. He keeps getting catered lunch at work and coming home stuffed.

  • We're having Crockpot chicken and dumplings. It's cold and rainy here today so I wanted something warm and comforting.

  • I've been getting creative because DH and I are doing a pretty strict diet...  Tonight, however, I really just wanted a steak, so I splurged on a good lean steak and I'll make some broccoli to go with it.  I might saute some onions, too. 

    Last night I made "Chicken Parmigiana" by grilling chicken breast and making homemade marinara sauce (40 calories for half a cup!) I just had that for lunch... Yum!

    21.8 pounds down this morning... Hoorah!  I took before pics, I need to take some progress pics soon. Maybe tonight. We'll see.
