What's for dinner at your house tonight???
I recently got a European crock pot and so I have vowed to try a new healthy receipe every now and then (when I remember and am motivated). I am excited to try this crock pot beef stew tonight.
Ingredients:
1 lb. top sirloin, cut into bite-sized pieces
3 cups of water
1 1/2 Tbsp minced onion
1/2 tsp salt
1/4 tsp ground black pepper
4 large potatoes, peeled and cute into bite sized pieces (1 1/2 lb.)
6 large carrots, peeled and sliced into bite-sized discs (1 lb.)
1 15-oz. can stewed tomatoes
4 cups tomato juice
Preparation:
1. Place the beef, water, and minced onion in a 4-quart crock pot, and cook on high for 1 hour. Add the remaining ingredients to the crock pot, and cook on low for 7 hours, assuring that the meat and vegetables become tender.

Yay! I love reading what other INs are having.
We are doing bison burgers on whole wheat buns, and probably a side salad with leafy lettuce, red peppers, carrots, purple cabbage, cucumbers, and whatever other veggies I can rummage up from the fridge. Probably apple slices for dessert.
I'm already really excited for dinner.
I was going to get take-out, but didn't know was in the mood for. Then I remembered that I have pizza in the freezer, so pizza it is!

I am having a beef and ale pie from Abel and Cole. Plus I'm drinking beer right now. And I'm having some M&Ms cause today sucked and I want chocolate and nuts. I have eaten less today and will go running tomorrow to make up for it all.
