LB's crockpot Mexican chicken
I tried to find the WFD post where it was discussed but I can't even remember how long ago that was.
It involved chicken, cream cheese and salsa, I think. Does anyone remember what else? Does the cream cheese go in at the end?

Re: LB's crockpot Mexican chicken
I toss the following in that morning or the night before:
4 oz of lowfat cream cheese (cubed)
3 or 4 boneless/skinless chicken breasts
Jar of salsa (I splurge and buy a non-El Paso brand because I hate chunky salsa)
Can of drained black beans and/or corn (optional)
Cook on low all day at work. Shred and serve over rice if you like.
