Headed to Vegas next weekend and it's pitiful how excited I am about the food I will be enjoying.
The best part of the meal (for me) is always the appetizers, desserts, etc. With our dietary restrictions (no seafood and DH doesn't do red meat) there's usually not a whole lot of entree options for us. I'd rather just split the one, token chicken dish every place seems to have and a bunch of sides, salads, etc. But I always feel painfully tacky ordering ONE entree for TWO of us, even if we get a salad, appetizers, soup, dessert, etc.
So here's my questions - if the TOTAL bill is roughly the same $$$ as if we'd ordered two entrees, am I still being painfully tacky? And, if so, scale of 1-10 how tacky are we talking? Should I just adopt the, "they'll never see me again so who cares?" mentality and over tip the waiter for having to bring out extra dishes/courses?

Don't worry about how many of each dish you order. I am sure (working in Vegas especially) they have been much weirder things happen. Order what makes you happy, and what you will eat. It's their job to serve the food you order, plain and simple, it doesn't matter what number of courses that order is made up of.
PS -- Where are yous guys eating? We picked Vegas as a honeymoon spot mainly for the food choices.

If you were ordering one chicken dish, zero sides, and just water... i'd say that's going too far.
But, if you're ordering one entree, two salads, an appetizer, and two drinks... I think you're fine. And, I think you can tip the standard rate - 15-25%, depending on service.

DH isn't terribly adventurous (thought he was going to throw up when he learned what foie gras was) and neither of us is big into sushi or care about drinks.
I'm looking at Olives, Alize, Switch and Bouchon.
Any suggestions (bearing in mind DH the no seafood and DH no red meat thing, too)?

We loved, loved, loved Bouchon. So fabulous. It's over 3 years now since we've been, but it was one of the highlights. Also, Mesa Grill was one of my favorites. Definitely check it out if you are into southwestern flavors. Spago was by far our favorite I think. It was the very beginning of my foodie-ness and I remember reading the menu and thinking there wasn't much I'd like, but took a risk and ordered something out of my comfort zone and it started many future meals of deliciousness. Any of Mario Batali's restaurants are fabulous as well. We went to one in the Venetian complex which I think has since changed names.

I guess I'm just sensitive since DH and I don't drink so our bill is always on the cheaper end. It's only happened a few times but we do get the occasional waiter who'll heave a huge sigh and kinda treat us poorly after that. I DO feel for them - afterall tips are a huge part of their pay but we generally overtip for good service so come on.
