What to do with a center cut pork loin?
I have a 3lb+ center cut pork loin. A crockpot recipe would be most appreciated because I don't have the time this week to roast it in the oven.

You could do a standard BBQ pulled pork as freeze the leftovers - that's my dinner tonight. i freeze it in 2-3 portion servings in ziplocs for me and dh.
my mom does a crockpot pork roast with rosemary, garlic, onions, potatoes and carrots - evoo and balsamic and maybe some chicken/veggie broth. it's a very good one-pot meal.

can you split it and freeze it? if so, i have a great cooking light recipe for a stuff pork loin that is like a cuban sandwich that only takes about 40mins.
or maybe a senate bean soup? or something with pork and apples that is fall-ish?
or if you are okay with slightly spicy what about a pork al pastor (like the tacos). its pork, chiles in adobo, and pineapple. i haven't made it before but i am doing the burger version this week.
