m- grocery shopping so something easy. maybe grilled portabellos?

f- london broil, artichoke and arugula salad, mashed potatoes

su- burgers al pastor, cilantro fries, dulce de leche banana cream pie
plus- i am going to try to make some purees to freeze for the little man. any advice on what was good out of the freezer and what needs to be made fresh is much appreciated.

sunday - dh had my leftovers from a baby shower i went to, i had the last of my butternut squash and goat cheese soup...mmmmmm fall flavors
tonight we are having bbq pulled pork from the freezer, probably as sandwiches with light mac/cheese and a veg tbd
maybe baked eggplant parm and pasta tomorrow
no clue the rest of the week. we are going getting dinner and then grocery shopping at wegmans weds after work
Jen D and others - how do you make london broil so that it doesn't taste like shoe leather? is there a trick in marinating it? dh hates london broil b/c he grew eating it and his mom is not a very good cook. i would like to bring it back but i'm afraid i will ruin it. tips, please!
Tracy I made london broil Saturday night with this recipe and it was AWESOME. I only wish we'd been able to grill it, but we waited too long and had to pan fry it, which wasn't as good. But the method was excellent! DH usually drowns his steaks in A-1 and never even took it out of the fridge this time.

we usually do a mccormick rub (montreal steak or the cowboy one) and a little olive oil. either sear it on the grill a la jend, grill pan, or sear it on the stove and pop it i the oven. i think the trick is to make sure you aren't over cooking or it can get gross. a good sear helps keep the juices in so does letting the meat rest.
for a 1 1/2- 2 inch thick cut we go 7-8mins per side and then let it rest.
for other marinades, soy vey and that kind, we only grill outside because if the pan is hot enough to cook the meat it gets waaaaay too smokey in the house.
Yesterday I made chilli, but we'll eat it tomorrow.

I have been using this recipe for a few years now and I LOVE it. I try to start marinating the night before or at least very early in the morning the day of dinner. It doesn't turn out as good if you only marinate for a few hours.

i just cant seem to get it together anymore ughh! i really need to get back into cooking good meals every day, I hate being unprepared but we did make dinner picks tonight so I have an idea for next week just need to buy everything
Sun- we had Anna's baptism so no cooking
Tonight- I needed something quick so I cut up some chicken and cooked it with a rice pilaf and some peas on the side. I thought it would be terrible but it was gone so I guess it wasn 't too bad
Tues- the big boys are at the Phils so I may just get a pizza for me and JD or take a visit to my mom's and hope she cooks something good
Wed- pork tenderloin that Shannon posted with sweet potatoes and a spinach salad
Thurs- breakfast since all JD requested this week is bacon, possibly banana pancakes since I have some over ripe ones sitting here
Fri-Sat- out of town with Dh's family
Sun- wine at the wine festival
Mon- chicken enchiladas and spanish rice
Tues- homemade cheesesteaks with broccoli rabe and a salad and fries
Wed- shrimp scampi
Thurs- good old chicken cutlets, mash, and corn
