Holy canoli, you guys (recipe rave)!

 

Perhaps it has to do with my obsession with pepperoncini peppers, but this dish is the best I've made in a while (and soooo easy):

 

Pepperoncini Beef (Sandwiches)

3 lb. chuck roast

16 oz. jar of pepperoncini peppers

4 cloves garlic

 

Smash cloves, cut 4 little slits in roast and insert smashed garlic.  Season roast as you wish (I just used Italian seasoning), place in crockpot.  Pour entire contents of pepperoncini jar over roast.  Cook on low for 8 hours. Shred meat (will totally just fall apart) and toss with peppers.

Serve on hoagies (I toasted ours) with a slice of provolone.  I also sauteed an onion to add to it (and would've added green pepper, too, had we had one).  

OMG.  Heaven on a plate.

  • This sounds awesome. I'm glad to see someone else shares my obsession with these peppers. I just had some today on italian nachos. super yummy. will definitely be trying this recipe soon!!!

    I may or may not have been eating them at nine o'clock this morning.  And I wish I had more right now.

  • Hi.  Can I come over the next time you make this?  Everyone I know hates peppers and I flat out adore them.  Plus the onions and garlic - yum!

    I will be saving this recipe in my brain for a time when I'm not cooking for my DH or his family, or my family.  Grrrrr.
