  • My brother still calls me Jeana Beana.  This is only after I beat his arse for calling me Jeana Weena.

    And yes :)  I think I might have more than one but this is the current favorite:

    Caramel Apple Crisp
    Ingredients:

    Crust
    1 cup unsalted butter
    1 teaspoon salt
    1/2 teaspoon baking powder
    1 teaspoon ground cinnamon
    3/4 cup brown sugar, firmly packed
    1 cup powdered sugar
    2 teaspoons vanilla extract
    2 3/4 cups all-purpose flour
    1 cup finely ground pecans
    1 large egg

    Filling
    4 to 5 medium tart apples which have been peeled, cored, and chopped (about 5 cups, I use Granny Smith apples)
    4 tablespoons brown sugar
    1/4 teaspoon salt
    1 teaspoon vanilla extract
    1 teaspoon ground cinnamon

    Topping
    1 jar caramel ice cream topping (I used Hershey's brand)

    Directions:
    Preheat oven to 350 degrees.  Lightly grease a 9" x 13" pan.

    To make the crust, beat together the butter, salt, baking powder, cinnamon, sugars, egg, and vanilla until smooth.  Add the flours, mixing til crumbly.  Set aside half the mixture (about 3 generous cups).  Press the other half into the bottom of the prepared pan to form the crust.  Bake for 17 minutes, til it barely starts to brown around the edges.  While the crust is baking, prepare the filling.

    To make the filling, after peeling and coring the apples, chop them into 1/4" to 1/2" sized chunks.  Combine the apples with the remaining filling ingredients and distribute over the crust.  Crumble the reserved crust mixture over the apples.

    Bake for 45 minutes.  Remove them from the oven and allow to cool for about an hour.  Finally, pour the caramel sauce over the top.
