Do you have a go to meal or food that you take to someone...

...when they get out of the hospital or a loved one dies? I'm not really wanting to do lasagna or PW meatballs and those are my go to items for something like this.

I need ideas....thought about smoking a brisket for sandwiches and then something for a side. Ugh...why do I have to make things more difficult?

  • What about manicotti? Chili with cornbread and salad? Homemade Mac and Cheese? Obviously, I'm on a fall comfort food kick...

    For me, it depends on the situation. Hospital-something easy to reheat and carry (if they have weight restrictions or are on crutches), Family dealth-if they have visitors, something that will serve lots, can be frozen, and easy to clan up after; no visitors-a full dinner for the family that's easy to heat/put together for them.

  • I like to do crock pot chicken tacos.... bag of frozen chicken breasts, 2 cans of rotels green chilies and tomatoes, and 2 taco seasoning packs.

    Then I like to buy all the fixings Tortillas/Hardshells, Cheese, tomatoes, lettuce, black olives, salsa, guac, chips... the meat is yummy and it freezes well..

  • I usually do Chili, Baked Ziti, or Chicken Soup. PW just posted an italian chicken soup that looks good.


    Also, I've made this for people before and it's been a big hit. It makes a ton, so I've put it in 2 big containers, so they can eat one, and freeze the other for later. And then I've just brought them a box of pasta so they can make that fresh.

     I also have a recipe for wild rice turkey soup that is AMAZING that I will try and find for you.

  • Here it is.

    If you want to make it faster you can use rotisserie chicken.

     

    2 chicken or turkey breasts boiled and chopped

    1 big can of cream of mushroom (add 1 can water depending on what brand you get)

    1 can cream of celery

    1 cup chicken broth

    Mushrooms

    Celery

    Carrots

    Potatoes

    1 box wild rice cooked

     

    Cook in crockpot until veggies are soft - about 5 hours. 

     

    I added the rice about 30 minutes before we ate.

    Did you see that recipe I posted last night using the chuck roast?  I don't know if you have extras of that, but it was super easy & super tasty.

  • I don't, but I learned a lot from FIL's funeral (my mother sucked at teaching me things like this).  My MIL's neighbors, family and friends have got to be the best.  I have never seen so much food and willingness to help.  I took notes.

    The things that went over well were the pasta salad or the ham with a side of cheesy potato dish.  Both were easy to take out of the fridge and eat or heat up.  There were tons of cake dishes and pastries, chips, pop, etc brought over.  Oh, someone brought over potato soup, more like a chowder, in a large mason jar with bread.   

     

  • Easy recipes that freeze well: lasagna and cheesy hashbrowns with ham chunks.  I use the no boil noodles and buy the ham in the meat section already cooked/cubed.  I just brought both those and tater tot casserole to a friend who got on bedrest....
  • My tried and true ones are pulled pork with a bottle of bbq sauce and buns, with a side dish (I make homemade asiago garlic potatoes, or just bring chips), PW's mac and cheese (I add cubed ham), Pot roast with cheesy potatoes, soup with bread and salad, fruit to snack on, and my personal favorite idea ever is I make chocolate chip cookie dough and freeze it in little balls then bag up and attach the baking directions,that way they can save for later or pull out just as many as they want at a time.

    I also always throw in some type of dessert.

    I think your sandwiches would be fab with like a pasta salad or corn on the cob.

  • I've taken food to 3 people this month.  I feel like I am seasoned in this topic. 

    Spagehtti and meatballs, bread, and salad.

    Chicken Enchillads, chips and salsa

    I picked up a rotessori chicken, and took over pasta salad.

     This time of year though hearty soup is always great.

  • I usually make either Chicken Encliladas:

    (brown equal parts butter & flour in an electric skillet, sautee some onions, pour in Watkins chicken base to make a paste (HAS to be Watkins brand) add grilled (or cooked somehow - rotisserie works in a pinch) chicken to mix. Grease large baking dish - put a little of the chicken mix in each tortilla with a small handfull of cheese, roll and line up in baking dish. Spread remaining chicken mixture over the top, covering all parts of tortilla, cover with shreaded cheese. Bake 30mins at 350 until brown & bubbly. Or don't bake, but give recipient baking instructions. Serve with chips & guac or salsa)

    or this pasta dish:

    (brown chicken, set aside. Sautee onions & green/red/yellow peppers and 2 cans mushrooms. Add chicken back to pan, shread. Stir in 2-3 packages cream cheese till melted, add chicken broth to make sauce to texture. Add large handfull spinich, cover to wilt. Serve over prepared bowtie pasta with crusty french bread.)

    Depending on the circumstances, I will bring dessert or booze.

    My current go-to dessert is Sopapilla Cheesecake:

    2 packages crescent roll dough sheets, 2 things of cream cheese, 1c sugar, 1T vanilla, 3/4c sugar, 1T cinnamon, 1/2c butter.

    Layer 1 can crescent rolls in greased baking dish. Beat cream cheese, 1c sugar and vanilla with hand mixer, spread over dough. cover with 2nd can crescent roll dough. Mix room temp butter with 3/4c sugar and cinnamon, dot over top of dessert. Bake 45mins at 350. Drizzle with honey before serving. It's amazing and seriously takes 10mins to prepare!!
