Well the first was the fig-prosciutto pizza with arugula that I mentioned in the "what's for dinner?" post. We happened to have everything on hand and it took about 10 minutes to make (with J's "help") and 12 to cook.
The other was calzones. Both of these were made super easy because I bought pizza dough at Trader Joe's, which you can buy a bunch of (or make yourself, ha) and then freeze.
For the calzones, we split one dough into two, rolled them out, and then filled with stuff we had on hand--marinara, mozzarella, sausage, and spinach. Pinched together and cooked for about 20 minutes.They were good, and pretty big. Probably could have gotten 3 smaller ones out of the dough.
You could easily do whatever fillings you have on hand--chicken, mushrooms, different cheeses, onions, peppers, etc. AND, I've read that you can actually prep them and freeze the calzones, uncooked, and then thaw and cook. I didn't use a recipe but I was inspired by this tutorial.
This weekend we're making your butternut squash cous cous recipe--it's one of DH's favorites!
