I need a good carrot cake recipe. I need to make one for my sis, in town from HI, for her birthday. I can find a bazillion recipes, but want one that someone's used and liked.

Best Ever Carrot Cake (tried and true recipe from my BH&G cookbook)
4 beaten eggs
2c all purpose flour
2c sugar
2 tsp baking powder
1 tsp ground cinnamon (optional)
1/2 tsp baking soda
3 c finely shredded carrots (lightly packed)
3/4 c cooking oil
1 recipe cream cheese frosting
1/2 c finely chopped pecans, toasted (optional)
1. Allow eggs to stand at room temp for 30 min. Meanwhile grease and flour two 9x1.5 in round cake pans and set aside. In a large mixing bowl stir together flour, sugar, baking powder, cinnamon, and baking soda.
2. In a med. bowl combine eggs, carrots, and oil. Add egg mixture to flour mixture; stir until combined. Pour batter into prepared pans.
3. Bake in a 350 degree oven for 30-35 minutes or until wooden toothpick inserted comes out clean. Cool on wire racks for 10 minutes. Remove from pans and cool thoroughly on racks.
4. Frost with cream cheese frosting. If desired sprinkle chopped pecans over frosting.
