macaroni recipes that are NOT mac and cheese

i have a few boxes of elbow mac in the pantry. my go-to Alton Brown recipe for Mac and CHeese is amazing but a little on the heavier side. i am looking for some easy salad or other recipes to use these up that are not mac and cheese....any go-tos?

  • this is my go-to pasta salad. the recipe calls for spiral pasta, but I don't see why you couldn't use elbow.

    Cilantro and Lime Pasta Salad (Serves 4)


    Salad Ingredients: 

    1/2 lb. Rotelle or other Spiral Pasta 

    1/2 cup Green Peas (Thawed if Frozen, Raw if Fresh Peas are Available) 

    1/2 cup Red Onion; Minced 

    1/2 Red Bell Pepper; Seeded and Finely Chopped 

    1/2 cup Fresh Cilantro; Coarsely Chopped 

    (Substitute Fresh Parsley if Cilantro is Not Available) 

    1/2 cup Yellow Summer Squash; Cut into Small Cubes 


    Dressing Ingredients: 

    1/2 cup Fresh Lime Juice 

    4 Tbs. Fresh Cilantro Leaves; Finely Chopped 

    (Substitute Fresh Parsley if Cilantro is not available) 

    8 tsp. Olive Oil 

    2 tsp. Granulated Sugar 

    1/2 tsp. Ground Cumin 

    1/2 tsp. Salt 

    1/2 tsp. Black Pepper; Freshly Ground


    Prepare pasta in a large pot of boiling water as directed on the package until al dente. Drain and cool. Toss with a teaspoon of olive oil to keep from sticking, if desired. Combine peas, red onion, bell pepper, Cilantro and squash in a large bowl and add cooled pasta. Toss to mix.


    To prepare salad dressing combine lime juice, Cilantro, olive oil, sugar, cumin, salt, and black pepper in small bowl. Whisk to thoroughly blend. Pour over pasta and chill. Serve on a bed of salad greens topped with the pasta salad. Cover and refrigerate to store.


     

  • things i do with elbow mac:

    - tuna pasta salad: tuna prepared however you like it, chopped onion and celery, chopped parsley, toss with prepared noodles

    - casseroles: whatever meats you prefer (i use tuna or chopped chicken), veggies (whatever i have on hand, steamed), can of cream of celery/mushroom/chicken. sautee onion, garlic and celery in evoo. add steamed veggies, s/p to taste, other herbs of your preference (i often use a bay leaf - remove before baking, or oregano, parsley, thyme, etc.), stir in meat. remove from heat, toss with cheese (i usually use pepperjack) and noodle, pour in casserole dish, top with mixture of fine bread crumbs and grated romano and bake 20minutes

    - pasta primavera: this is usually prepared with something like penne, but i hate penne, so i use elbow. sautee your favorite veggies, some chopped tomatoes, onion and garlic, mix with noodles. drizzle evoo and fresh grated sea salt and pepper. serve with fresh grated romano or feta and artichoke hearts.

    - i serve my chili with elbow noodles

    - i make soups with it...usually veggie soups. here is one i made this weekend: sautee chopped carrots in evoo until beginning to get soft. add chopped celery and onion. sautee until soft. add garlic. when garlic turns soft, add 2 chopped tomatoes (seeds removed), 1 can each of red kidney and northern beans, heat through. add 2 quarts of veggie stock, chopped carrot tops and 2 cups frozen okra, bring to a boil. reduce heat, add herbs and spices (i added chopped fresh parsley, oregano, thyme, s/p and a bay leaf), cover and simmer for 30 minutes. add prepared noodles and serve.

  • Toss with sundried tomatoes, marinated artichoke hearts and goat cheese. Toss while hot if you want the goat cheese to make a creamy sauce. And you do.

    Toss with cucumbers, halved grape tomatoes, olives and herbed feta, maybe some olive oil and lemon juice, too for a Greekish pasta salad.

  • I haven't tried this yet, but I'm planning butternut squash mac and cheese.

  • We do lots of chili mac with elbows. 

    Last night we did pesto, sundried tomatoes & elbows.  recently my husband has made a caccitorie-style red sauce (onions/garlic/tomatoes/white beans/a little thyme & rosemary) to go over elbows.  we get the barrilla variety pack from costco so there's always a few boxes of elbows that need to get used!
