I don't have a real recipe, but here's how I throw it together.
Ingredients: chicken breast, mozzarella cheese, parmesan cheese, tomato sauce, flatbread, olive oil, oregano
Typically I use one chicken breast per sandwich, depending on size. I grill up the chicken breasts and then slice each one into thin strips. (You could use breaded chicken too if you prefer) Lightly brush outer side of the flatbread with olive oil and place on the grill. In a separate bowl mix the two types of cheese with oregano. Place already grilled chicken on one side of the flatbread on grill. Apply tomato sauce and then layer with the cheese and seasoning mix. Wait for the cheese to melt and then fold in half to create sandwich.
This works perfectly if you have a panini press. It's an easy leftover meal after we've grilled and have the chicken leftover. I've also sprinkled some garlic powder on the flatbread to make it into more of a garlic bread...yum.
