I was thinking about your cupcake post the other day and was wondering, about how many mini cupcakes do you get out of a batch that would make 12 or 24 cupcakes? I've made them before, but usually get tired after a couple pans and make regular ones to get it over with, lol. So I was just wondering if you have a good way of calculating.
Re: *sarack*
it depends on the recipe but like my s'mores recipe makes 4 pans of the 24 cupcakes but you only fill the cups half full.. the vanilla recipe i just found and adapted makes about 2-3 of the pans.
If i don't want a ton, i'll make a half batch, i rarely quarter recipes. usually a half batch will make what you want plus. also, if you start with vanilla, you can add stuff to it and make it other things, like add extracts or chocolate or lemon or coconut or whatever you like..
i've never just needed 12 little cupcakes.. but when they wanted 8 dozen, i was able to use the vanilla batter to my advantage, make the vanilla ones i wanted and divide the batter to add extracts and zest to make lemon/coconut.
