Butternut Squash (and maybe sweet potato) Soup?

Does anyone have a really awesome recipe for butternut squash soup?  I made that Cooking Light creamy mac and cheese again this week and have a whole bunch of squash left (already cubed too!).

I was thinking of doing a soup with some sweet potato, but my "wing it" soups usually just come out "okay", not "awesome!".

Cream is ok, and we generally like a bit of a kick to our squash soups.

    Ditto - usually we roast the squash, add sauteed onions, garlic, chicken stock, milk or cream, curry powder. Then blend!

  • So, I ended up winging it, and it was freaking awesome.  In the past I've struggled with adding enough seasoning, so I really took my time and tested is this time.  Once I'd added enough salt it was just glorious.

    Also?  I super duper <3 my immersion blender.  Holy crap, that was one of the smoothest soups I've ever made, and I didn't strain it!
