menu suggestions

Claire is getting baptized next weekend and I'm trying to finalize the menu for the luncheon we are hosting afterwards.  We will have moms, dads, and kids there, so I'm trying to make sure there's something for everyone.  Also, we'll be having people back to our house right after the service (it's at 2) so I'm trying to minimize things that need to be cooked/heated.

Here's what I have so far.  I feel like I need another appetizer, and I'm not set on what entree to serve besides pulled pork.  I thought about lasagna, but that takes a while to cook, and we're having pasta salad, so it's too much salad.  Please give me your suggestions!!

    Apps

    parmesean knots/pepperoni pizza puffs

    Veggie platter w/ ranch

    hummus and pita chips

    Pumpkin fluff dip with animal crackers and graham crackers (or with dessert)

    Main:Pulled pork and meatballs with little rolls so people can make either kind of sandwich, Peanut Butter and Jelly Sushi (for kids), Buffalo Chicken Bites

    Curried cous cous salad

    Greek Pasta salad

    Some kind of salad/veggie (like tomato/mozzarella, green bean vinagrette, ceaser salad)

  • I thought about (and am still thinking about) mac and cheese.  Just worried about the cooking time....

    I thought about doing meatballs, but do you think having two meat entrees is ok?

    Green bean salad sounds yummy.  Do you have a recipe?

  • Do you have a crockpot?  I bet there's a mac-n-cheese recipe out there that woudl help with the whole cooking time thing.

    Or you could do sweedish meatballs in the crockpot or something similar.  That would suffice as both an appetizer and a meal if people wanted.

  • You could bake the mac adn cheese before and then warm it for 20 minutes when you get back.

    I would do turkey rolls up too (but I like them for everything)
