Anyone have a good Creme Brulee recipe?
I would prefer something with Vanilla Bean (not sure if this is for all creme brulees or not - but I know I like the Vanilla Bean taste!)
And do you have to have a mini torch to get the top caramelized just right?

chocolate creme brulee by cat cora (sorry, i can't make it clicky on my mac) and yes, you do need the torch for this one. totally worth it though.

I, too, am a creme brulle purist and it is rrr's favorite dessert. Any creme brulee I make will unfortunately only be ranked second best on his list because of a favorite he had in New Orleans that is no longer available.

I do mine under the broiler since I don't own a torch. It's not quite as pretty (i'll call it "rustic", lol) but it still tastes great. I found the trick to doing it under the broiler is to put your creme dishes into a cold oven, then turn the broiler on.
