I'm curious whether it really matters how you chop the garlic when you add it to a recipe - usually I'm lazy and just put it through my garlic press. Do you think it matters whether you chop/smash/press/slice?

IMO it doesn't matter for the average person, with the average palate, eating an "every day" type of recipe.
FWIW, I have this giant jar from costco and that's the only garlic I use:
I have this as well.
He also has a staff and all of the time in the world to cook. He doesn't have to cook with 20 minutes to spare, while needing to run somewhere else and while ravenously starving.

well, glad to know I'm not the only one. although funny garlic story: after our ILs left this past Christmas, our fridge started to stink. Like, REALLY bad. I had to hold my breath when I opened it and I couldn't figure it out. I cleaned it and made sure nothing was rotting etc. This went on for a couple weeks until I finally realized that the bag of pre-peeled garlic MIL had bought was the problem. I didn't think anything of it during my cleaning because it was in a bag and the smell was not really garlic-y, but as soon as I removed it, the smell was gone. That stuff is pungent! I felt bad because there was a lot left, but I was SO annoyed at that point from not being able to figure it out for weeks I just tossed it.

This is really good to know. My mom's been trying to convince me to switch to the bag of pre-peeled garlic from costco and prepping it myself before cooking, she swears things taste better. This has definitely put my in the "not going to try it" camp.
i buy the pre-peeled garlic from asian grocery stores...i swap it to a tupperware container and it stays fresh, doesn't stink, etc.

I could probably have put it in something (like glass... or lead, lol), but I was just so mad and sick of the smell I tossed it. Plus, I enjoy unpeeling garlic, call me crazy
