Dinner suggestion for camping - help!

FF and I are going on our last camping trip of the season this coming weekend, and I'm cooking dinner on Saturday. The other couple we're going with is cooking on Friday night -- she's making sloppy joes and mac & cheese.

I was originally going to make my loaded potato soup and beef stew, since I assumed it would be chilly outside. After all, it's October in Michigan, and let's face it. It gets cold here! Well, the weather forecast is calling for sunny skies and 72-75 degrees (woohoo!) I'm not so sure soup is the route I want to take.

Any suggestions for a meal? I have full acess to an oven/stove and a grill.

ETA: I want to steer clear of hot dogs and hamburgers -- we've had that one too many times this summer!

  • Would you be able to use a crockpot? What about Hawiian Pulled Chicken? I serve it on Hawiian Rolls. So yum.

    I just made a delish salsa chicken rice casserol I can get you the recipe if you want. It was easy and you could probably premake it and just throw it in the oven.

  • Tacos/Taco Salad

    Spaghetti with butter bread/garlic bread and salad

    Chili and cornbread

  • I totally ditto tacos or taco soup. On the same lines, you could do quesadillas! Or what about baked potatoes on the fire?
  • Chicken and Potatoes:

    Before you leave:

    thaw chicken breasts and season with your favorite (ie: lemon pepper, garlic and butter, italian dressing, taco seasoning, etc.) and wrap each separately in tin foil sealing the ends well.

    The night you are cooking:

    Peal potatoes and slice them 1/8" thin and cut up and onion into large chuncks

    place on tin foil, add a few slabs of butter, s&p, garli powder or minced garlic, italian seasoning, red pepper

    (1 serving of potatoes on a sheet of foil so they cook faster)

    wrap up potatoes and seal ends well

    Then place potato packs over warm fire embers (if you can place a grate over the embers even better) turn often.  Once they have about 20 minutes left to cook add the chicken packs.

    Open and serve!  YUM!

    Pizza pockets:

    Before you leave:

    brown up italian sausage

    cut up favorite pizza toppings (black olives, mushrooms, onions, etc)

    Night you are cooking:

    take 2 slices of bread and press one into each side of sandwich maker (pudgy pie maker)

    spoon and spread pizza sauce (store-bought works well) onto each slice of bread

    add a heap of mozzarella cheese and your favorite pizza toppings

    Close sandwich maker and warm over fire until the cheese is melty!

  • I really enjoy the taco idea.

    Or you can make burritos, wrap in foil, and reheat over the grill.  Then top with your favorite cold toppings when they're warmed back up.

  • You could also do hot saugsage/brats on the grill, with peppers and onions done in foil packs.  And also have fried potatoes in foil packs.
