bean recipes

looking for tried and true bean recipes - Sam needs more iron and I've never cooked beans before.

any favorites? could be soup, beans and rice...anything a little one might like.

  • Sure...here is my MIL's famous Lentil Soup recipe:

    Amalia?s Lentil Soup

     

    1 bag lentils

    1 carrot, finely chopped*

    2 stalks celery, finely chopped

    1 onion, finely chopped

    6 cloves garlic, thinly sliced

    ? cup olive oil

    1 tsp. chicken base/bullion

    4 bay leaves

    10 cups water                                        

    1 small (8 oz) can tomato sauce

    1/4 cup white vinegar (or more, to taste)

     

    Add lentils to 8 quart pot, cover with water; bring to a simmer.  Remove from heat and drain water.

     

    Return lentils to pot and add above ingredients though water.  Cook over high heat until soup comes to a boil.  Reduce heat to medium and cover; stirring occasionally.  Simmer until lentils are soft, approximately 45 minutes. 

     

    Stir in tomato sauce and vinegar.  Simmer for another 5 minutes; serve. 

     

    NOTE: This makes a large batch so you may want to have some spill proof, airtight containers on hand to freeze. 

    * I usually chop 2-3 carrots because George loves them but, adjust to your preference.  It won't effect the cooking time.

  • Lil has the same issue and we found the easiest thing is to sneak some beans into things she already likes.  I throw kidney beans in her favorite soup and she will gobble them down without thinking about it.  I even put them in a few chicken dishes.  Also, we are lucky enough that she likes her greens, so broccoli and spinach have been a huge help!

  • i have a lentil pasta recipe i can post for you later tonight

    *edit- I lie! I found it in my email :) I love this, its so yummy and easy.

     

    Make a type of small  pasta- like shells, bowties or elbows. Boil the water with salt and put 1 teaspoon of oregano in water, set cooked pasta aside,


    In a pan like wok or deep pan put 1/4 cup olive oil with 3 or 4 cloves garlic, chopped and some chopped up onions (like little onion half) do not burn. Add 2 cans lentil soup (progresso) and cook 15 mins when you see it start boiling on side add pasta and stir.  Sprinkle parmesean cheese on top mix in.

  • will she eat chickpeas? I have a recipe for a chickpea and pasta soup super easy- let me know if it will work and I will try to find the recipe

     

    Also what about hummus? my neice who is 2 dips her goldfish in it

  • i have no idea - we'd have to try it.

    i can try hummus in the meantime though - i'll eat it if she doesn't...actually, i should check the WW points before i agree to that!
