Suggestions for my Christmas eve menu?
I just tried these out on DH last week and he loved them (I didnt spread the may on the bread, I used the "sauce" and spread it on instead for less mess- and no poppy seeds).
They were pretty good...are they good enough for a appetizer buffet for the entire ILs for Christmas eve? And, do I need to have the poppy seeds?
What else would you serve (heavy apps) to go with this? There will be 2 children, 1 teen, and 6 adults. Some of the adults are "big" eaters.

Those don't say Christmas to me at all. Maybe a holiday brunch, but nothing special before a holiday dinner.
I don't mean to discourage you, because I am a big fan of serving whatever strikes your fancy and fully expecting people to love it. But if you ask, a Christmas Eve appetizer would be better served as a platter of assorted cheeses and meats (ham, pepperoni, cheddar, jarlsberg) with a side of crackers or bread. Maybe some anti-pasta like olives, hummus, roasted peppers.
In my family, shrimp cocktail is a big hit among adults and children. So, while not that original, it's a huge crowd pleaser. HUGE crowd pleaser.
Yeah, these don't impress me, but probs 'cause my mom has been making a, better, version my entire life.
I think of Christmas Eve as a fancier affair.

We will also have a cheese platter with crackers and smoked salmon/cream cheese crackers(I mix cream cheese with some herbs, pipe it onto thin crackers and top with smoked salmon) We also do a honey glazed ham and a ham cheese casserole(similar to a quiche) that my mom always made for Christmas.
Christmas Eve is not a fancy dinner. The only people we have over are my dad and brother and DH's parents. It's time for the grandparents to spend time with the kids on Christmas without all of us feeling rushed. Wejust nibble all night. It's not a formal sit down meal.
Fancy doesn't have to mean sit down. What' you've outlined here, to me, is fancy heavy apps. The op's ham sandwiches, while delicious to some, just didn't ring as "Christmas Eve fare" to many.
It's definitely not a fancy crowd. When the ILs come around we definitely have to get super casual.
Do you have a recipe for them you could share?
Like I said in my pp, the ILs aren't fancy. I have tried to go the fancy route on them with a full on apps and dinner and making nice and special, but they didn't like it. They want all apps and finger foods. The ILs are borderline white trash. So, nothing fancy, super casual is what Im going for.
The ingredients are almost identical, but the prep is what brings it over the top, as baking them gets a crust on the outside, while the inside is melty goodness:

Potato skins might work! Wingettes may be too messy, and they hate mushrooms

From what you've said about them, maybe try something like this:
Sausage, cheese, and crackers
Veggies and dip
Ham & swiss sandwiches
Roast beef & cheddar sandwiches
Chicken tenders
Oven fries/potato wedges/potato skins
Green bean casserole (so there's something hot on the line)
Some sort of spinach puff pastry/crostini/quiche for another green thing
Sugared nuts
Box brownies with these melted on after you take them out of the oven

I love that you added another sandwich choice, and I will have to find some sort of green veggie thing like you mentioned. Love the sugared nuts and brownies as well! Thanks for all of the suggestions, now I can get to work finding recipes!
