Mine isn't exciting this week because we are going to be gone alot.
Monday: Burgers at the in-laws for MILs bday
Tuesday: Ravioli, Salad, and Garlic Bread
Wednesday: Steak for Rusty, Cereal for me
Thursday: On our own. Rusty has bball at 6 and I have vball at 7:30
Friday: On our own. Rusty is going to Late Night in the Phog and I am bowling for Junior Achievement.
Saturday: Grilling. We are having our bi-annual kickball party at our house.

Yesterday we made a huge spiral ham and now have tons of leftovers!
today - I"m rosting a chicken in the crock pot, with it we'll have rice and sauteed zucchini.
Not sure about the rest of the week - as I am not positive on dh's work schedule. ONe night we'll have steak tips, egg noodles and corn....
The rest of the week will probably just be leftovers and such.
Tonight: Homemade Gnocchi "Mac" and Cheese
and then in no particular order, just whatever we feel like making that night, I have ingredients for the following:
Pot Roast
Baked Potato Soup
Angel Chicken
Mongolian Beef
Fajita Ranch chicken wraps
Parm Crusted Tilapia
tonight: Steak, salad, baked potatoes
Tomorrow: Homemade pizza with basil, tomatoes and mozz
Wednesday: pulled pork sandwiches (our neighbors make the BEST pulled pork), green beans, salad
Thursday: something with tofu-Sean's last day of prep class
Friday: either a roast or something on the grill, depends on the weather

Hmmm... let me see what I can come up with (this is in no order... just whatever I feel like on any given day):
Salmon with roasted asparagus and either wild or basmati rice (probably 2 nights)
Spinach, mushroom and chicken pizza bread on Rosemary Focacia
Marinated chicken, veggies and rice
Chicken, mushrooms and spaghetti sauce over penne/rigatoni?
We'll see...
YUM!!!!!!!!!!! But I altered the recipe a bit, though I am sure the original recipe is delish as well.
I used this for the gnocchi - super easy

but I didn't use all the fancy cheese... I just used a bag of pre-shredded Kraft Italian blend. It was easier and way cheaper. I didn't add parm to the top, just left the sauce as is. And I didn't add Dijon because David hates it. But I did add the basil.
It was still delicious!
