Every year for 32 years now, ILs' college buddies have all gotten together one weekend a year to watch football and hang out and play lawn games. It's grown over the years as the families have, with now about 40-50 people.
You never know what's going to show up for food, but some people always bring the same thing. There is/needs to be enough food for lunch, afternoon snacks, and dinner.
Here's what MIL knows for certain will be there. There's no telling what else might show up.
BLT spread with veggies
Pesto spread with crackersHam
Fried chicken
Ribs
Deviled eggs
Sugar cookies
Brownie torte
I want to bring a few things since I haven't done much entertaining this season.
DH requested his grandmother's hash brown casserole, which is ridiculously popular and I think a good option because it's hot.
I was thinking of corn salad, but I'm not sure if it's out of season. I mean, it's in the 80s all week here, so it's not out of season weather-wise for us, just maybe taste-bud-wise.
Maybe black-eyed pea salad or broccoli-pecan salad or baked beans.
I also want to make an apple pie bc I found a new recipe and apple's FIL's favorite.
WDYT? Have any crowd-pleasing recs?
Re: What should I bring to this potluck?
I'd lean toward the black eyed pea salad. You're rigth about the corn (and that makes me think salsa). I've been obsessed with this orzo pasta salad lately. I do recommend adding a drizzle of balsamic vinegar. I've also added poached chicken to it and man is it good.
I love hash brown casserole so thumbs up to that.
MMmmmmmm apple pie. I don't like to make crust so I make a mean apple cake if you're interested.
I would definitely do the hash brown casserole and black eyed pea salad (do you have a recipe you can share?).
What about home made salsa & tortilla chips? PW's recipe is really easy (I just use my blender).
I think a cole slaw would work well with the ribs & chicken, especially since the weather will be warm.
For the hash browns? The black eyed peas is already linked.
