Sweet potato recipes needed!
What is your favorite way to have sweet potatoes (or DH's, if you aren't a fan and he is)? I bought two ginormous sweet potatoes at a local produce stand and DH likes them any way so I need some inspiration!

I really like to make sweet potato fries or wedges (i.e., big fries) with chipotle-mayo dipping sauce. Just chop them up and season w salt, pepper and chipotle and baked at 400 degrees for like 30 minutes, depending how big. Then mix pureed chipotles in adobe w/ mayo and VOILA! so easy.

Please please please make sure to use a food processor or mandolin to chop the taters in that one super duper thin, or they won't cook through and it will be yuck. (I speak from experience)

I love just cutting up the sweet potatoes into strips and putting them in a saute pan with coconut oil and a bit of salt. The coconut oil is key (and I don't like coconut, coconut oil does not taste like coconut). Very simple, very tasty.

CRAP!!! I'm such a jerk I mean to warn you of that. I have never ever ever ever been able to make a successful crispy sweet potato fry without frying it (and even then, they aren't SUPER crispy). I still think they are delicious, but it's disappointing if you're expecting crispiness. Sorry
Whoa no worrie Rach :-) I know potatoes are hard to get crispy, They were tasty for sure though! Only on the super thin one (which aren't really "steak fries" in that case) did they get crispy ish. The thicker ones were pretty limp, which was really more disappointing than not being crispy. I am forewarned for next time though, and you are most certainly not a jerk! I still
