I need crockpot recipes -- please! :)
Since my big crockpot has a missing lid (???) and I'm tired of not having meals cooked for me and DS to enjoy together during the week, I upgraded to a new crockpot with a timer. I currently have a roast in there to be waiting for us when we get home.
That being said, I don't have many good crockpot recipes. And it seems like all the "good" ones I find have a lot of condensed soups in them. I don't mind the soup, but I don't want to cook with them all the time.
What's your favorite slow-cooker recipe that would be ok cooking all day?

I have made the Char Siu pork (double the "sauce" ingredients or it will dry out/burn) and it is delicious!
Right now we are loving pepperoncini beef sandwiches. Put a pound or two roast and a jar of pepperoncinis and cook on low for about 8 hours. Shred and serve on buns. It's SO good. I usually freeze the leftovers to heat up another time.
Crockpot lasagna is pretty good. I also really liked doing a turkey breast or a whole chicken in there and eating off of it all week. Oh, and there is always the old standby of chili and taco soup.
I've made a buffalo chicken chili that I loved. The recipe is at home. I also have a recipe at home for a potato and corn chowder that was delicious. I got both out of magazines.

I'd be curious about the buffalo chicken chili!
For the chicken, just take out all the innards and pat dry. Season however you like. I usually do salt, pepper, paprika, onion powder, garlic, etc. If you are putting potatoes and carrots and stuff in there, place the chicken on top of them. If not, ball up some foil to keep the chicken off the bottom of the crock. I usually put a bit of broth in, but you don't need much. Cook on low 8-9 hours, depending on the size of the chicken. Just make sure you check the temp before you eat it. The chicken literally falls off the bone. It's so good.
For the pepperoncini beef, put the peppers, juice and all, in with the beef.
I'll try to remember to post the buffalo chicken chili tonight. It was really good. I made it a bit too spicy last time, but I still loved it.

I love doing a whole chicken in the crockpot. I usually do that on a weekend, and then have stuffing and mashed potatoes and gravy.
Definitely do it. It's pretty much fool proof and you can use up the meat all week.

On Sunday, I put a pork roast in the crockpot w/one can of cream of mushroom, some salt and pepper and let it cook for 5 1/2 hrs. I used the juice and stuff and made it into gravy. Then had a bag of green beans you can steam in the bag for 3 minutes. Everything came out awesome.
Amanda, I know you said you'd rather not use alot of condensed soups. However, I have a recipe for some really easy, and really good chicken and dumplings in the crockpot.

adapted from Southwest Slow Cooking
1 jalapeno, seeded and chopped
1 white onion, chopped
5 garlic cloves, finely chopped
3-4 boneless skinless chicken breasts
1 T oregano
1T black pepper
1 tsp chili powder
cheese
warm tortillas
oil
Put first 4 ingredients in crock pot. Add the next three. Cover and cook on low 5-6 hours.
Shred chicken. Fill tortillas with chicken mixture and cheese. Roll up and place on baking sheet.
Brush with oil. Broil 3-5 minutes
