Monday - we had grilled brown sugar bbq chicken breasts and green bean salad. DH wanted no starches since he carbed it up over the weekend.
Tuesday - fire-roasted tomato and basil chicken sausage, sauteed with peppers, onions, zucchini and an 8oz can of tomato sauce...yum.
Weds - homemade whole wheat pizza, using Tuesday's leftovers and adding mozz cheese on top - my favorite way to use leftovers sausage cooked that way.
Thurs - something easy/quick that won't produce leftovers since we are going away for the weekend and i need to run errands that night.
Fri-Mon...eating in the great city of Boston and surrounding areas! chowda...yum
S-Lobster Sauce w. crabmeat and penne
M-One Pot Italian Chicken
T-Mexican Stuffed Peppers

I have to try to gather more recipes that can either be done ahead and frozen, or are in the crock pot for 4+ hours, or can be done spur of the moment. Long story short, we have a new regional manager at work, and I can't plan to leave one second early (where as in the past I could shoot out a little early if it was dead or whatever)...so I have to be more on the ball and creative about meals so that things are ready to go quickly when everyone is finally home at 9:45.
