I'm trying to add more seafood/fish to our meal rotation, but I have a hard time getting inspired by any of the recipes I see. So help me out - what are your favourite fish recipes?
I'm not set on any particular type of fish, and open to trying most anything. I just prefer it to be relatively quick if I'm going to cook during the week.

I'm all about seafood and pasta right now. My husband makes this totally killer clams & pesto recipe that's insane.
But for easy, I looove mussels. They're done in no time, especially if you do a simply white wine/garlic preparation.

Also, one of the easiest and go to recipes I do a lot is my Nana's for Baked Parmesan Sole. - Spray a pyrex pan with Pam, dollop some butter on the sole, cover with parmesan and bread crumbs, bake for 15min at 375. So easy and simple, but tasty. Just add some rice and a green veggie.

kaesha, I do love mussels, but I've never tried cooking them at home - for some reason I find them intimidating. If they're really that easy, maybe I should reconsider!

With halibut, cod and tilapia I like to slice lemons thin, set the filet on top and simply season with salt, pepper and fresh dill, then top again with lemon slices and bake.
We also love steamed crab legs at home over rice, though nutritional value goes out the window when you dunk them in a pound of butter.
I used to as well... but seriously, they cook up in 3-5 minutes! Crusty bread and a bitter green salad on the side and you're totally in business.
