Slow Cooker Recipes

Buffalo Chicken Chili via Betty Crocker

Corn Chowder:

6 slices bacon

1/2c chopped onion

2c potatoes, cubed

2c corn (I use frozen or fresh off the cob)

16oz cream corn (I just use all regular corn)

1T sugar

1t worchestershire

1t season salt

1/4t pepper

1c chicken broth

Mix everything but broth together in the slow cooker. Cook on high 3-4 hours on high (I'm sure you could do 7-8 on low). Mix in broth and cook until heated through.

    Does anyone else feel like EVERY fall we have a million posts about slow cookers? The Nest should make a slow cooker BOARD. hah!

    Jo, do you chop the bacon up? 

    Oh, yes! I also cooked it first so it would be crisper. You could even just add in it at the end as a garnish (do this if you like it crisp).

    Bake it in the oven instead of fry it on the stove. Not only will the taste be better, your place will not smell like bacon for weeks.

    I second this.  It's so much easier with a LO around to bake it too.

    I've tried it. I don't like it when baked and when frying, the smell only lingers an hour or so in my house, less if I can open the kitchen window.

    I think the smell lingers too, but I like it super crispy and baking/broiling it doesn't do it for me.  Plus I don't have a broiler pan for the oven Embarrassed

  • I just make bacon in the microwave. I have one of those special bacon plates and use damp paper towels. I kind of love it this way as it is NOT greasy at all and gets super crispy like I like it :-) it smells up the kitchen but not for days or anything, and it is super easy cleanup!

    The other day FF called bacon a food of the Gods. I couldn't agree more.
