I don't want to go to the extream of the Extream Couponers, but I would really like to learn how to get the most for my coupon dollars when I shop. Anyone here really good and willing to share their secrets? And anyone know stores that double or triple coupons? None of my local ones seem to...

Like the previous poster, I do only clip coupons for items I would normally buy anyway. People can get into trouble and overspend by clipping and actually using too many coupons for items they don't normally buy or need. Often times these are want purchases instead of needs.
I rarely stockpile. At most I might buy say 8-12 cans of Campbell's select harvest soup when it's on sale BOGO free somewhere and I combine that with coupons from the campbell's site for like $2.00 of 4 cans, or $0.50 off one, $1.00 off two, etc. That's only because my 2 kids and I love that soup for lunches at home and can go through it quickly and I refuse to pay $2.50+ a can regular price @ the grocery store for it when not on sale. At Publix I was able to get our soup for BOGO free which worked out to be $1.19 a can for the select harvest soups. I also had some $1.00 off one can, $0.50 off one can $2.00 off 6 cans, etc. to stack on top of that BOGO sale. So technically some cans were only 19 cents after $1.00 coupons and the bogo free price. It was awesome! Same goes with the pasta sauce we like sometimes I'll buy 6-8 at a time when they're BOGO free because we actually use 2 jars of sauce when I make spaghetti and meatballs so we have leftovers. Other than that, I usually buy items in quantities of 2-4 at most, things like boxes of Target diapers (on sale for $1.00 off regular price, I usually have a printable Target coupon for $1.00 off each box on top of that, AND I try to do it when they're offering a $5.00 Target gift card when you buy two boxes of diapers). These are consumables that we regularly go through.
I absolutely do not buy nor stockpile items our family doesn't actually use or need. I haven't even watched Extreme Couponers, but have heard there was a lady on there who didn't have children yet stockpiled like 40-50 boxes of diapers. I only see this as ok if she intends to donate these items to families in need, women's shelters, disaster victims, etc. If just holding onto these diapers in her home, it doesn't matter how good the deal was, they're of no use to her and could be benefiting someone out there who needs them whether donated or purchased by themselves.
I also try to match up coupons I have on hand to items that are currently on sale at the stores I already shop at.
It is nice that Target allows stacking of manufacturer's and Target mailer or printable coupons. You can use one Target and one manufacturer's coupon per item. The printable coupons for Target are on their website. It's tiny print @ the bottom of the main site page that says coupons. Some of Target's printable coupons are actual Target coupons and some are manufacturer's coupons so you have to pay attention to that. Say a manufacturer's coupon for Right guard deodorant for example was on Target's printable coupons. You couldn't combine it with an additional manufacturer's coupon for right guard that you found via another coupon source such as Smart Source or Redplum, etc. But had that coupon on Target's website said it was simply a "Target web coupon" instead of manufacturer's, then you could combine it with a manufacturer's coupon you found for the deodorant from another printable, magazine, or other circular source.
Southern Savers is a good resource because she does the homework for you of matching up coupons with current sales for various grocery, pharmacy and other stores like Target. She also has a coupon database that is newer and helpful. Say you're running to the store to buy Chobani Greek Yogurt or Tide detergent for example. You can go to her coupon database and type in an item or brand you plan to buy and see if there are any known coupons in circulation on the web and on print sources like newspaper inserts and in magazines. If you type in Chobani yogurt, it might tell you there are currently no known coupons, or it might give you one or a few results for current coupons readily available for print on places like Redplum, Smart Source, in a magazine, or links to ways to obtain coupons such as signing up for emails from the manufacturer's site. I've done that on Campbell's, Blue Bell, Oxiclean, Kashi, yoplait, woolite, and many more.
I always suggest starting small. Start with one or two stores and build from there.
Target is a great start like PP mentioned. They allow for 2 coupons on one item - 1 Target coupon and 1 manufacturer coupon. I'd suggest starting there and maybe a place like Walgreens.
Best website ever to help start you out is hip2save.com Colin has AWESOME coupon match ups. She also has videos for coupon newbies to help you get started. I go back a watch them from time to time to get a refresher on the basics! I also suggest totallytarget.com and wildforwags.com.
Grocery stores are a bit more tricky, because prices are very regional. In my area we have Food Lion and Harris Teeter (this one doubles and triples). Both those are regional though, so there's not a lot of blogs to give you tips on those. If you are in the South, southersaver.com covers that region pretty well for grocery stores.

I'm a couponer too but I've never really done online coupons before....but that website IS amazing!! Its got tons of freebies too, which is sooo cool!
