or do they just keep going up in price?
I looked yesterday at SUV's in Denver for a week and the price was just at $600 and it's already up to $764 today.
Is this something I need to book now or wait?

I found the best price for an SUV using Priceline and Hotwire name your own price. If you are okay with paying the $600 start at $500 - $550 and see if anyone takes it. Then you can gradually increase the price until it's accepted. We paid close to $300 less than the going asking price for an SUV this summer in Myrtle beach.

Scroll down the page about half way to the name your own price section. Put in your destination and dates. Once you hit bid a list of types of cars will come up. SUV's are at the bottom of the list.
You can only put in 1 bid every 24 hours so start now and bid low. You never know who'll take it.
