  • Dora, I can't believe you've missed this one in years past!

    1 cup sugar

    1 cup canned pumpkin (NOT PUMPKIN PIE FILLING!)

    1 cup shortening

    1 egg

    2 cups flour

    1 teaspoon cinnamon

    1 teaspoon baking soda

    ? teaspoon salt

     

    Mix sugar, pumpkin, shortening, and egg. Add flour, cinnamon,baking soda, salt. Add pecans as desired.

     

    Bake at 350 for 12 minutes.

  • I know you guys have raved about these forever, but I'm still not sure if I'd like them.  The "pillow" part is throwing me off.  Are they more cake-like or cookie-like? I imagine them as similar to the texture of a madeleine (which I do not particularly enjoy).

  • They are very cake like.  Erinn and I were experimenting with subbing out the shortening for butter last year.  I think she found a good combination.

  • What Raynes said, very cake-like. They are so freaking good, though. I kept trying them with different nuts and chocolate chips last year. I can't wait to get my hands on some pumpkin.

    I'd actually say less cake, more muffin...  But yes, they are very soft cookies. :)

  • I was so sad this past weekend because I wanted to make pumpkin cupcakes and they said they hadn't gotten any pumpkin in yet this year! Indifferent It's October!  The lady helped me look everywhere, but there was no canned pumpkin in sight :(
