I've actually never made them but sreihing made some when I visited her last year and they were deeelish!

Dora, I can't believe you've missed this one in years past!
1 cup sugar
1 cup canned pumpkin (NOT PUMPKIN PIE FILLING!)
1 cup shortening
1 egg
2 cups flour
1 teaspoon cinnamon
1 teaspoon baking soda
? teaspoon salt
Mix sugar, pumpkin, shortening, and egg. Add flour, cinnamon,baking soda, salt. Add pecans as desired.
Bake at 350 for 12 minutes.
I know I can't believe I would miss this! I will definitely try these this weekend.

They are very cake like. Erinn and I were experimenting with subbing out the shortening for butter last year. I think she found a good combination.

I'd actually say less cake, more muffin... But yes, they are very soft cookies.
