Who posted the Mexican Pork Chops Crockpot recipe?
I've had this recipe in my book for a while but I just made it for the first time last night. It was SO good. Next time I may make it with chicken. Anyway, just wanted to say thank you.

Okay, I'm doing this from memory.
Put boneless pork chops in the crock pot and sprinkle with a packet of taco seasoning
Add 1 cup of salsa
Add 1 chopped onion
Add 1 chopped green pepper
Add a drained can of beans (I used black)
Add a drained can of corn (I can't remember if this was on the original recipe but I did this)
Cook on low for 8 hours.
As a side, I made Rice a Roni whole grain Spanish rice from the box and threw in a can of tomatoes for extra nutrition. It was really delicious and pretty healthy. My 2 year old even ate some.
